Blue cheese burgers to the rescue on a hot summer day

When it is hotter than blue blazes outdoors,

grilling burgers for dinner is a hot idea.

Now, I know that blue cheese is not for everyone, but it can be quite tasty.  And I’m with those who don’t love it, I’ve been one to crinkle my nose up to blue cheese, but Mr. does love it.  And he convinced me to give these burgers a try last summer.  They are ooey-gooey yummy – a 3 napkin kind of burger – served on a paper plate.

And they are even better tasting when the burgers are cooked on the grill.  Check out those grill marks – perfection, eh?

This past weekend, Mr. brought the recipe back out.  And we were satisfied, yet again.  I, IMG_5636csskrupa3of course, watched…there was red wine involved.  It’s the least I could do.

Blue Cheese Burgers with Red Wine Onions

BBQ, Beef, Sandwich, Weber

Ingredients

2 tablespoons olive oil

1 medium red onion, cut into thin half-moons

½ cup dry red wine

¼ teaspoon dried thyme

Kosher salt

Freshly ground black pepper

pounds ground chuck (80% lean)

½ teaspoon smoked paprika

4 ounces blue cheese, preferably Blue Castello®, cut into 4 slices

4 soft hamburger buns, split

2 small handfuls mixed baby greens (optional)

Directions

  1. In a large skillet over medium-high heat, warm the oil. Add the onion and brown for 3 minutes, stirring occasionally. Reduce the heat to medium-low and cook another 5 minutes. Add the wine, thyme, ½ teaspoon salt, and ¼ teaspoon pepper. Bring to a simmer, reduce the heat, and simmer until the liquid cooks off and the onions are fully softened, about 10 minutes, stirring often.
  2. Prepare the grill for direct cooking over medium-high heat (400° to 500°F).

  1. Mix the ground chuck, paprika, ½ teaspoon salt, and ½ teaspoon pepper, and then gently form four patties of equal size, each about a ¾ inch thick. With your thumb or the back of a spoon, make a shallow indentation about 1 inch wide in the center of the patties to prevent them from forming a dome as they cook.
  2. Grill the patties over direct medium-high heat, with the lid closed, until cooked to medium doneness (160°F), 9 to 11 minutes, turning once. During the last 30 seconds to 1 minute of grilling time, place a slice of cheese on each patty to melt, and toast the buns, cut side down, over direct heat.

Remove the burgers from the grill, plate, and top with the blue cheese, tent with aluminum foil and move on to the next step.

Build each burger on a bun with a patty, caramelized onions, and baby greens (if using).

Serve right away.  Remember to grab 3 napkins!  And that’s how I fell in love with blue cheese burgers on a hot summer day.

  3. Or if you prefer to keep it simple with ‘Blue – whether that’s azure, cobalt, sapphire, cerulean, navy, ultramarine, indigo, or turquoise
  4. And if you’re feeling particularly adventurous try to combine two of these, or maybe even all three!

Whatever you decide to do, please remember there is a rule if you want to part of the Square Gang and be sure your squares make into the gallery.

Your main photograph must be square!

Hopefully, you can join me in posting daily but if daily is too difficult, then it is okay to post every other day, weekly or even just ‘once in a blue moon‘. As no matter how often you post I will include you in at least one blue gallery (well I will if you keep your photographs square!!).

  2. Looks like you could start your own cooking show! Looks delicious too (well, for me, minus the blue cheese – cheddar is my favorite). And you could just drink wine and observe and document! That would work for me too 🙂 Happy Tuesday. Sunny and warm here.
    Square photos are nice – not sure how you did those, but I know it’s an option on the iPhone. Not sure about my new camera. I may check out Brian’s blog for some tips!

    1. LOL – that’d be funny – but, we’re not quite that good – I just enjoy playing while Mr. does the hard work.

  3. Shelley, these look absolutely delicious!!! I will try the black bean version of these (the whole cholesterol thing makes ground beef a no-no for me). I recently tried macerating onions in red wine vinegar to get rid of the worst onion-y taste and I really like it, but using red wine is even more appealing! Plus, there is nothing else to do, but drink the wine you don’t use in the recipe. We wouldn’t want it to go to waste! 🙂

    1. Ooh, that sounds yummy with black beans. I love black bean burgers. The red wine sauce in the recipe is really good at mellowing the onion taste. Cheers to wine not going to waste!

    1. LOL – yeah, blue cheese takes a bit to get used to. I’m still not 100% sold, but this recipe does make it easier to like. Aw – I wish I could send some rain – we had a lot. It is finally sunny tonight, for a bit before rain comes our way again. Stay cool – those are HOT temps!

  5. Not a blue cheese fan, but those look amazing. I’m really intrigued by the red wine onions. They look like they would pop almost anything. Must try.

    1. Yeah, blue cheese is last on my cheese list. But in Wisconsin – cheeseheads keep giving it a try just to make sure we weren’t missing something. Yes, try the onions, they are delicious!

  6. I’m not a fan of blue cheese, but who doesn’t love a good burger? Those look good to me. Kudos for grilling in the heat.

    1. You know your burgers, so I’m glad you approve! Mr. grills in the winter and the summer – there’s no stopping him, unless it’s too windy and downpouring some kind of precipitation! Not perspiration, precipitation.
